Raw Cantal Cheese - Helles Lager
Non-pasteurized, French-style cheese; a mild cheddar-like cheese with a firm texture. Unlike a cheddar, the curds are not cooked to a higher temperature creating a subtle yet complex flavor profile. Aged 6 months.
Oktoberfest Cheese - Autumn Ale
Curds soaked in AleSmith Oktoberfest ’22 lager, pressed and aged 4 months. Medium sharp with notes of malt and yeast.
Za’atar Havarti - Burnt Mill Brown
A washed curd cheese style spiced with Middle Eastern Za’atar. Mild cheese highlighted with notes of Sumac, Thyme, Sesame Seeds, Paprika, Cumin, and Oregano aged 1 year.
Porcini Mushroom Gouda - Maple Donut Stout
A Dutch-style, low acidic cheese with savory umami flavors of broth from the generous addition of dried porcini mushrooms. Aged 4 months.
